Title of the Program: One day workshop on ITALIAN CUISINE Date:21st Sep’10

The Department of Hotel Management & Catering Science & Human Resource Development Centre of Srinivasan College of Arts & Science conducted a 0ne Day Workshop on Italian Cuisine for the students of Hotel Management & Catering Science of the College. Resource Person was Mr.P.Senthil Kumar, Head Chef, Tuscana Restaurant, Chennai. Chairman SHRI.A.SRINIVASAN presided over the function. Mr.V.Chandra Chowdry, Human Resource Development Centre (i/c) welcomed the gathering. Prof.S.Yogananth, Head, Hotel Management & Catering Science introduced the Resource Person. Resource Person in his key note, he has given brief introduction about the Italian Cuisine. He emphasized on how to prepare Italian food, how to present the food to the guests, and how to decorate it. He explained in detail and about how to prepare the following Italian foods, Tomato Bruschetta, Minestrone, Caprase Salad, Italian Braised Chicken, Pepper Crusted Fish, and Traditional Tomato Sauce with Penne, Aubergine Parmigiana Cannelloni Zucca, Tortelline and Sweet Cannoli. Students of Hotel Management & Catering Science, they themselves prepare all the Italian food items; through which they equipped themselves.60 students of the department participated and benefited. Prof.A.Mutharasu, Principal, Ms.R.Sasidhara, Vice-Principal offered felicitations. Arrangement of this workshop has been made by V.Chandra Chowdry, Human Resource Development Centre (i/c), Prof.S.Yogananth, Head of the Department of Hotel Management & Catering Science, Prof.N.Ramesh, Prof.V.Sridarkannan, Prof.Sasikala, and Mr.Durairaj supporting staff helped in arrangement of the workshop.
